Since 2011, Oliva has served clay-oven pizza, pasta dishes, and seasonal plates in a small neighborhood setting where regulars, families, and visitors sit around the same table.

Our Story

From a Clay Oven
to a City Tradition

Oliva began as a small kitchen in Jabal Al Lweibdeh and grew into a place where friends, families, and neighbors gather around simple and tasty food. Our clay-oven pizza, pasta dishes, and seasonal salads come from a straightforward approach: good ingredients, proper cooking, and a table meant for sharing. What started with a handful of tables and an open view of the kitchen grew into one of Amman’s most consistent Italian restaurants, known for reliability, good ingredients, and a style of hospitality that feels familiar.

As the years passed, Oliva grew without changing its core. The menu expanded, the cooking methods strengthened, and the team built a rhythm that kept the restaurant steady day after day. In 2022, Oliva opened a second branch in Shmeisani, carrying the same approach to a new part of the city. The growth was simple: another kitchen, another room, the same principles.

Today, both locations carry the same purpose: to serve good food with the same steady approach that has shaped Oliva from the start.

The Place

Where Simplicity
Meets Flavor

Oliva’s spaces are shaped by light, natural materials, and the quiet connection between the kitchen and the room around it. Wood, open shelving, and warm tones create a setting that feels lived in rather than styled. It is a place made for everyday eating: weekday lunches that stretch naturally, dinners that settle into conversation, and familiar faces returning without ceremony.

Both locations reflect the same rhythm. Each sits comfortably in its neighborhood, carrying the same ease and grounded atmosphere. The atmosphere is warm and open, with a simplicity that feels natural.

Our Kitchen

The Work Behind the Plate

Inside the kitchen, the work is clear and methodical. Dough is mixed and left to rise slowly. Sauces simmer in small batches. Herbs and garnishes are added at the right moment, not earlier. The team cooks with consistency and restraint, letting good ingredients and proper timing carry the flavor.

Pizzas bake until the base holds its structure and the toppings settle cleanly. Pasta dishes follow classic Italian methods that rely on heat and balance. Salads shift with the seasons, built around produce that keeps the plate fresh and straightforward. Tiramisu and other desserts stay close to their original profiles.

The kitchen is open in both branches, part of the room rather than separate from it. The movement, the sounds, and the steady work form part of the atmosphere. It is a kitchen shaped by discipline rather than complication, and by the belief that simple cooking, done properly, is enough.
